We always have a traditional Thanksgiving Day lunch which includes, but is not limited to the following: Turkey (of course) dressing green beans sweet potato casserole- pecan topping - not marshmello (child's favoite) mac & cheese rolls relish tray (stuffed eggs, stuffed celery, olives, cranberry sauce, etc.) squash gibble gut gravy a multitude of desserts and a hundred pound weight gain

I call Carrabbas and Honey baked ham and call it a day. I dont do any cooking Christman EVE. I get it all catered. Its worth it cause I can have leftovers for days.

I love Thanksgiving. We usually have the following:
Turkey stuffing mashed potatoes roasted root vegetables squash broccoli and cheese casserole corn rolls cheese and cracker platter relish tray (different pickles and olives) cheesecake pumpkin pie apple pie
For Christmas Eve we have: lasagna meatballs and sausage w/ sauce garlic bread salad chocolate cake

I will be eating out of the hospital snack machine as I do every Thanksgiving, Christmas Eve, Christmas, New Year's Eve, and New Year's Day.
Just a reminder to bring a little culinary joy to those who have to work the holidays. Actually, I think I would fall down dead of appreciation if someone ever brought me a nice dinner at work.

policewife: here is the recipe for enchiladas
1 chuck roast 1 small can of diced green chilis 1 small onion diced salt & pepper cumin chili seasoning cook roast until tender - drain juices (save some) and shred beef. put the beef back in crockpot. Add a little of the drained juice, 1/2 can of cream of mushroom soup and 1/2 can of red enchilada sauce, 1/4 cup sour cream and 1/2 shredded cheese. Heat through. You can either fill the tortillas and top with enchilada sauce and shredded cheese, or you can put the mixture in the fridge over night then reheat and fill the tortillas.
I do the over night thing because the flavor is so much better. You may need to adjust the juices, soup, sour cream and enchilda sauce according to how big of a roast you cook. You don't want the mixture to be soupy.

To keep everyone at bay before the big meal is ready: Sausage Cheese Balls Hot Bacon Swiss Dip and Crackers
Meal: Turkey Dressing Mac-n-Cheese Gravy Dinner Rolls Green Bean Casserole Store bought cake for dessert This year, we have company so a ham might be in that mix
Christmas Eve: I don't know yet - I'm thinking Chicken and Sausage Gumbo or Chicken Etouffee
Christmas Day: Cinnamon rolls or biscuits for Breakfast Sausage Cheese Balls and the Hot Bacon Swiss Dip for appetizers Meal: Costco Spiral Cut Ham Fett. Alfredo (I make - well not the pasta but the rest from scratch) Green Beans Crescent Rolls Store Bought Cake for Dessert and whatever other baked goods we have around.
