I'm in LOVE...with almond flour...

I'm in LOVE...with almond flour...

Ok Gluten free peeps,

Where has almond flour been hiding all these years?

WE just made almond flour chocolate chip cookies and they are so moist and chewy and not a lot of fussy ingredients. THis is a big step up from our rock hard hockey puck gluten free cookies of the past.

So I am thinking AF would be good for most of our favorite cookies and probably brownies too.

Any other suggestions generally?

Generally I will us our old flour for my pies and cakes and gravies and such but I think AF is going to be my new friend.

We like almond flour, but we usually cross it with coconut flour and cornstarch. I even have a scrumptious recipe for gluten free cinnamon rolls!

If someone is allergic to almonds, would this work?

Bearhugs, NO, almond flour is just almonds ground up. Coconut flour would be ok.

Here's the cinnamon roll recipe. It's even a Cinnabon copycat!

I do substitute cornstarch for both the potato starch and the tapioca starch (so a total of 3/4 cup). Other than that, I follow it exactly. The video is really helpful the first time you make them.
