We've been grabbing Cliff bars a lot instead of fast food, but they can be very expensive. You can keep 3 simple ingredients on hand and make these homemade bars whenever you want, and keep them in your freezer for a few months. On the way out the door, grab one from the freezer (they thaw quickly) and an apple and you're ready to go.
1 cup of of peanut butter ( I used Trader Joe's) 1 cup of blue agave sweetener (you could use light corn syrup) 3 cups of old fashioned oats
Double the recipe to make more.
Mix peanut honey and sweetener in large bowl and then stir in oats. Press into a 9 x 9 pan. Cool them in the refrigerator and then slice them into bars. Wrap and store. ( I freeze mine) They only keep for two weeks in the refrigerator. These taste better the day after you make them when the oats have softened up.
I tried this recipe with honey and I did not like it. It was too strong.
There are lots of variations and things you could add in, but these are good with just these 3 ingredients and they are cheaper to make than buying Cliff bars. You could use organic ingredients if you like. I use organic oats that I buy in bulk for 1.49 per lb.
I hope you will try this and like them as much as we do. At one time we were just getting fast food too often and Cliff bars was/is a great choice, but they cost so much. Making these has helped our wallets and our health and so I wanted to share this. : )

This sounds great, but I have a question. Is peanut honey the Trader Joe's peanut butter, or is there supposed to be honey in it, too? Sounds really good, anyway:)

I used to make similar bars from Grape Nuts cereal. I *think this is the recipe.
1 - cup light corn syrup 1 - cup sugar 3/4 - cup reduced fat peanut butter 4 - cups Post Grape-Nuts Cereal
They are energy bars. They made me run around cleaning and feeling peppy. Unlike most sugary treats, the high lasts for a while and you don't have a cranky crash. I don't recommend them for car trips. I recommend them if your house is a mess and your mother-in-law is comming over in 5 hours. :)
I like to pack stuff like a gallon of water, some cups, and some sandwiches.

Sounds good. You could probably add dried fruit or nuts if you wanted as well.

It's just peanut butter. There isn't any honey in it. The other recipe posted here looks good, too. : )

Those sound yummy! We can't eat either of them cuz of gluten content, so what I like to have on hand is trail mix. I buy 1 carton each:
pecans walnuts almonds raisins
Mix all and put in ziplock bags, grab and go. Coconut flakes are good too.
We also eat bananas on the go too.

Good thread! We like the Odwalla bars, but they're just under a buck each at Walmart. We pack crunchy granola bars, apples, baggies of pretzels, and dried fruit. Popcorn does well on the go too.
