Upper level math - VidoeText Science - Aplogia Math - Ray's Arithmetic, MUS?
I am a little confused by your question, especially for core subjects in the lower grades. These will generally progress by skills, especially in math. Are you looking for books that don't have numbers on them? Couldn't you just say that they are level # instead of grade? I'm honestly not being snide, I'm just trying to understand what you're asking so I can help.

Well, this is one of the strenths of the ACE program, using paces without grade levels on them. They even offer placement testing.
Rainbow Science comes to mind as well for middle school science. They have an upper elementary program coming out soon, and also offer Chemistry.
Mystery of History (MOH) is a great choice for history, but the last volume covering modern history is still in waiting to be published.
Many people see Rod and Staff English AND CLE LA as "levels" rather than grades, because they are so advanced.
For literature, you could use guides from either Progeny Press or Total Language Plus, which offer their products according to grade ranges rather than one particular grade.
For Math, there's Saxon, MUS, CLE, and TT in which most folks usually ingnore the "level" and simply place their dc according to their placement testing. In fact, most of these math programs do not follow a traditional scope/sequence, therefore placement testing is paramount to success, yet they are all very solid programs providing an excellent education to your kids if they are placed correctly.
If you absolutely want NO grade or level mentioned whatsoever on the cover, then ACE is probably what you're looking for.
HTH a bit. :)
